The best bike shop I've been to in the area is The Bicycle Outfitter in Los Altos. They've got a pretty big selection of carbon bikes you can test ride in store.

Mountain View = mediocre bike shops (no high-end stuff): Performance, the Off-Ramp (Fuji/Giant).

Los Altos = a few shops: that triathelete shop on El Camino, Chain Reaction by Foothill Expressway

Palo Alto = $$$$ bike shops: Palo Alto Bicycles, VeloTech on Emerson Street (BMC's, Pinarellos, deRosa, Pegoretti, Trek Madone, Look, Calfee, Parlee, etc).  Be prepared to spend $5k-$10k+ though.

for mid-range carbon roadbikes, go to Mike's Bikes or Bike Connection in Palo Alto or Go-Ride in Redwood City, you can get a Specialized Tarmac/Roubaix or Cannondale Synapse or Scott or Felt F1series around $2k+

Tarmacs, Giants, Fujis, Cannondales are all carbon and can be gotten in on for $2k anywhere, just get the 2007/2008 models cuz the 2009's will be out soon, so get into any bike shop and start dealin!

Orbeas not so much, though you could prolly find one on CL for your price, they start the mid/high range bracket.
